How come date fruit stays good for longer?

Date fruits stay good for longer because they are dried until most of their moisture is removed. When this happens, the growth of microorganisms are inhibited. To increase their shelf-life, store them in the refrigerator in an airtight container. You may also freeze them for up to a year.
